BEER DETAILS
ENCHIRIDION
Reserve Imperial Stout
A Blend of Single, Double, & Triple Bourbon Barrel-Aged Stouts
14.3% ABV
The second batch of Enchiridion, our blend of single, double, and triple bourbon barrel-aged stouts, is here… and it was well worth the wait. Inspired by the process of making Lief, our Méthode Traditionelle – 3 year blend, Enchiridion is similarly a blend of one-, two-, and three-year old beer. We wanted to try this blending process with a stout, but introduce something different along the way. Each year, the stouts that make up Enchiridion are placed into a new barrel for maximum barrel impact: tannin, bourbon character, and long-term mellowing of the stout. The single barrel portion was aged in 4-year-old Breckenridge; the double barrel was aged in Breckenridge, then 10-year-old Widow Jane barrels; and the triple barrel was aged in Breckenridge, then Blanton’s Mash #2, then Widow Jane. Altogether, character from six bourbon barrels went into this unique stout. A celebration of long-awaited bourbon complexity arises with aromas of crème brûlée, lightly toasted oak, and wildflower honey, while flavors of caramelized fig, melted milk chocolate, and cinnamon bark delight the taste buds.

ROES RED
Oak Barrel-Aged Flanders-Style Red Ale
7.5% ABV
Presenting batch #7 of our Flanders-style red ale, Roes Red—named after the Belgian town of Roeselare where the style originally developed. This is the third batch of Roes Red to be aged in our 1000-gallon Barolo cask from Italy, housed in our Carlsbad taproom. And, for every batch of beer that’s aged in the cask, we place some in bottles and kegs to be enjoyed, and leave a portion leftover in the cask to go into the next batch. Batch #7 contains a 50/50 blend of new fresh Roes Red and a portion of both two- and three-year old previous Roes Red batches. The result is a reddish-mahogany colored ale with notes of oak, dried dark cherry, red currants and toast. The complexity of this beer is further driven by Winslow’s proprietary blend of yeast strains—Belgian in origin—which produce sour lactic and acetic characteristics. A fresh take on a classic style, Roes Red is beautifully intricate and delightfully refreshing.
