Another epic collab brew day in the books. After Keith made his rounds at our Vista brewery, we teamed up with @artifexbrewingcompany to brew a bold murky IPA loaded with Pacific Northwest–grown Citra, Citra Cryo, and Strata hops, plus Motueka Abstrax for extra lift.
This beer is rooted in a decades-long family friendship between our Director of Brewing Operations and Artifex co-founders Nicholas and Tom Cordato, which makes this one even sweeter.
We can’t wait to share it with you next Tuesday. 🍻

As we get closer to celebrating 10 years of Pure Project, we wanted to slow things down and look back at how it all began.
In this new series, we’re sitting down with Pure Project owners Mat, Jesse, and Winslow to share the stories, missteps, memories, and moments that shaped Pure into what it is today.

There was a late night, a rainstorm, and a brew day on Jesse’s front porch in Costa Rica.
In this episode, Mat and Jesse look back on their very first brew day as Manuel Antonio Brewing Company. Brewing into the night, working through the rain, and learning firsthand what it really takes to make beer happen.
Jesse was almost Pure Project’s head brewer…until we found Winslow Sawyer (sorry, Jesse).

Reserve Imperial Stout - Blend of Single, Double, & Triple Bourbon Barrel-Aged Stouts
13.5% ABV
Batch #4 of Enchiridion, our reserve imperial stout, is here! This blend of single, double, and triple bourbon barrel-aged stouts is placed into a new barrel each year for maximum barrel impact: tannin, bourbon character, and long-term mellowing of the stout.
For 2025’s version, the single barrel portion was aged in Buffalo Trace; the double barrel in Weller, then Cutwater Bourbon; and the triple barrel in Elijah Craig 10-year, then Old Fitzgerald, then Cutwater Bourbon. A celebration of long-awaited bourbon complexity arises with aromas of brown sugar and brownie batter, followed by flavors of fudge, toasted oak, and fig.

As we get closer to celebrating 10 years of Pure Project, we wanted to slow things down and look back at how it all began.
In this new series, we’re sitting down with Pure Project owners Mat, Jesse, and Winslow to share the stories, missteps, memories, and moments that shaped Pure into what it is today. Some of these stories go way back, long before our first batch was brewed in San Diego.
Before Pure Project, before Miramar, before San Diego, the idea actually started more than 12 years ago in Costa Rica.
In this first episode, Mat and Jesse talk about their original attempt at opening a brewery called Manuel Antonio Brewing Company. And no, Manuel Antonio wasn’t a person they knew. He was a local farmer who donated his land to Costa Rica, which became Manuel Antonio National Park, land that sat right in Jesse’s backyard and helped inspire the name and the mission.
They brewed beer, hosted “pound for pints” beach cleanups, and shared what they made with the local community. Brewing in Costa Rica came with its challenges, and eventually the dream made its way back home to San Diego, where Pure Project was born.
This story set the foundation for everything that came next.
